Continuing with December’s theme of cocktails, here is a simple martini recipe with a lime twist topped with meringues! For the lime-oncello, you can find a brilliant recipe on Food Republic but if you want to avoid the extra effort you can replace it with lime vodka!
50ml Lime Juice
25g Caster Sugar
Lemonade to top up (I haven’t put any lemonade in mine)
- Grind the caster sugar to make it superfine
- Mix in the lime juice and lime-oncello
- Add lemonade to top up ( I chose bitter)
1.Put all the egg whites from the eggs in a bowl and whisk until stiff
2. Slowly stir in the sugar
3.If you want your meringues to sit over the edge of your glasses create ‘U’ shapes
4. Bake on 130 for an hour
5. Leave in the turned off oven for three hours for the ultimate crispness!
